There’s something very special about pizza. It’s comforting, quick, social and so delicious. Wandsworth’s Well Kneaded pizzeria and van make some of the most special pizzas using organic veggies and high welfare meat.

A few years ago Well Kneaded made the jump from trading in their van to setting up shop in my home town, Earlsfield (just a couple of doors down from the sadly now-closed Ben’s Canteen, latterly Bloody Ben’s). They’d started up with the good people at KERB back in 2011. As well as producing some of the best pizzas I’ve ever had, they’re also a social enterprise, giving young people experience and opportunities; they work with local churches and charities to provide young people from marginalised inner-city communities the skills they need to work in food. Good food and a good ethos.

They’re huge champions of seasonality: using the best of what’s available naturally. Each month they have seasonal meat, veggie, and vegan specials creating an ever-changing menu which keeps me intrigued and coming back for more. Some of my favourites have included wild garlic and nettle pesto with Jerusalem artichoke puree, muntjack deer with kimchi made from radicchio, and squash puree with sage pesto. It’s not just about these combinations though, they’re great at the classics (a true sign of quality) so don’t be scared off.

As well as making deliciously light Neapolitan-style sourdough pizzas, they also make a mean gluten free base using rice flour which is a winner for me as it means my wife can enjoy them too.

We think that if you can dodge the clichés and the media filler, sustainability is quite exciting. This is because it demands innovation, lateral outlook and willingness for adventure.
